Roasted Zucchini & Bell Pepper Sandwich

Here are the ingredients I like to use for a roasted veggie sandwich (sandwiches are probably the optimal picnic food)



  • Bread
  • Sliced Muenster (would probably prefer pepper jack but this block was on sale)
  • Dijon Mustard & Vegan Mayo (which I definitely prefer over regular mayo)
  • Sliced Zucchini
  • Sliced Red Bell Pepper
  • Spring Mix
  • Sliced Tomato
  • Avocado


Salt and pepper your veggies before you put it in the oven

400 F for around 10 minutes is good.
